The Carleton Golf & Yacht Club is currently seeking a Head Chef.
Located along the banks of the Rideau River just minutes from downtown Ottawa, Carleton was one of the first golf course residential communities established in North America. Established in 1963, CGYC is a member-owned private facility known for its outstanding course conditions, friendly atmosphere, and an unwavering commitment to offering an unforgettable member experience. In recent years, Carleton has hosted the Canadian Men’s Mid-Amateur Championship, PGA of Ottawa Zone Championship, PGA Canadian Seniors’ Championship, and numerous Ottawa Valley Golf Association events.
Carleton Golf & Yacht Club is a 12-month golf facility and includes a championship golf course, an indoor Golf Academy and a Fitness area. With a very active membership, Carleton has many golf, corporate, and social/dining events taking place throughout the year.
Responsibilities:
The successful candidate will be a vital member of the Food & Beverage operation. You will have a chance to shape the food offerings and make your mark at a tremendous and welcoming private golf facility! The Head Chef will report directly to the Food & Beverage Manager and will be responsible for, but not limited to:
- Managing food preparation served from the main kitchen
- Controlling and directing the food preparation process
- Managing and working closely with other Chefs of all levels
- Creating menu items, recipes and developing dishes ensuring variety and quality. Update & Design appropriate menus, including the preparation of alternative recipes to accommodate customers with special diets/food allergies
- Collaborate with staff, vendors and the Management team for special events
- Plan, prepare, cost and coordinate all special events and weddings
- Determining food inventory needs, stocking and ordering
- Order food supplies, track shipments and communicate with vendors
- Manage expenses in line with budget guidelines
- Maintain the kitchen in accordance with food & beverage, health and safety regulations. Ultimately responsible for ensuring the kitchen meets all regulations, including sanitary and food safety guidelines
- Responsible for health and safety
- Scheduling, hiring and training of Kitchen Staff
- Planning of professional development and training activities for Food and Beverage staff
- Adheres to all federal, provincial, and municipal laws regarding health, safety and employment and Harassment
- With the Food & Beverage Manager, investigates, reports and resolves member food & beverage concerns
- Interprets and enforces CGYC policies, rules and regulations.
- Previous experience in the golf industry is considered an asset but is not mandatory
Salary: $65,000 to $80,000 annual salary based on experience
